Well I am back on track now :) Kicked myself up the backside!

After my large breakfast, I had a snack much later of 2 T of red pepper hummus with 4 flax crackers, and then an hour or so later 2 small slices of tiny spelt bread with 1 tsp of almond butter.

I have just made a crustless quiche to have tonight after spin. I have made a larger one so that I have something to take for lunch tomorrow.

4 eggs
2 egg whites
300g of well drained lf cottage cheese
Maldon sea salt & pepper
1 tsp smoked paprika
Handful of baby spinach
1/2 grated zucchini/courgette
5 cherry tomatoes
5 pieces of new asparagus chopped into 1/2" pieces
1T chia seeds

Combined it all, seasoned with S&P, and then sprinkled the paprika over and then baked at 160 C for about 30 minutes (fan assisted oven) until it set. Then have left out to cool. It will deflate, but never fear! LOL

I will have a green monster smoothie about an hour before spin, with the following:

1/2 frozen banana
1 C unsweetened almond milk
1 scoop vanilla protein powder
1/2 T peanut butter
dash cinnamon
handful of spinach
1 tsp chia seeds
Handful of blueberries
3 strawberries

Whizz it all up and I should be plenty full until after spin.
