Recipe epiphany!

Funny how the odd tweak to a recipe really makes it click!

Tonight I had some kale to use up so I went to my go to recipe, Crispy Kale as coconut bowl:

This time I just sprayed the kale with pam (like frylight) and then mixed up 1/2 tsp dark soy, 1/2 tsp coconut aminos, 1/2 tsp sesame oil, 1 tsp sriracha chili sauce, And........1 TBSP of sweet chilli sauce. The sweet chilli sauce was awesome!! I poured it all over a large portion of kale and I mean half a big bag. I added 1/2 cup of coconut chips this time as well and stirred together and cooked as usual. Oh yeah and I had a bit of leftover tenderstem broccoli I chucked in as well. It was just fab! I had it will roast chicken and a dab of leftover guac on the side. Now totally stuffed and feeling virtuous! :)

Sadly I then looked over to spot the cat! Oh well, he must have been thirsty!


  1. Mmm...toasted coconut flakes. I am always looking for new recipes for kale. This one sounds like something I'd like. It's got it all! I some kale... :)

  2. Funny I had never had kale any other way but steamed with carrots (because that's how my dad has it) :-) but wow, I really love it now and it's a regular in my house. Now to convince hubby that he likes it too!
